 Founded in 1896, Federico Paternina established this winery on a site with cellars excavated in the 16th century in Ollauri Rioja Alta.
Its origins date back to Eduardo de Paternina, father of Federico and Marqués de Terán, one of the pioneers of modern viticulture in Rioja at the request of his close friend the Baron de Rothschild, who years before had acquired the Château Brane Mouton.

DO CA RIOJA

30% Chardonnay, 25% Macabeo, 25% Parellada and 20% Xarel.lo.

12% VOL.

Elaboration

After a first fermentation and bottling, the second fermentation takes place in the bottle. The bottles are then taken to the underground cellars for their aging period and contact with the yeast lees for a minimum of 30 months.

This cava is only produced in exceptional years using select grapes. It then undergoes a long aging of 40 months before its release.

Food match

Ideal for fruit salads (especially with grapes, apples and pears) or dried fruit. It also pairs the neutral flavor of pasta especially well. Pasta with Bolognese sauce, spicy Asian noodles, paellas and risottos.

Notes

Its pale yellow color denotes the excellent aging in the Reserve, with a good and well integrated bubble.

We find hints of ripe fruit, with a background of nuts long aged on the lees.

On the palate, it is fresh and balanced.
